I'm usually in charge of dinner around here, because my girlfriend is hopeless in the kitchen, and I love to cook. (She says that my cooking is the reason she wants to marry me.) Tonight I made us a chicken garlic pizza. This recipe is so easy that not even an amateur can screw it up.
1 boneless chicken breast
2 tablespoons of butter or margarine
1 tablespoon of olive oil
2 cloves of garlic, minced
2 tablespoons of chopped yellow onion
1/2 teaspoon of dried basil
1 can of pizza crust dough
2 tomatoes, sliced
1/2 cup of chopped fresh cilantro
1/2 cup of chopped Italian parsley
1/2 cup of Ricotta cheese
1/2 cup of grated six-cheese Italian mixture (or Parmesan cheese)
Put the chicken in a pot of water and boil it for 20 minutes or until its no longer pink. Drain it and let it cool, then cut it up into strips, or however you prefer.
In a small skillet over medium heat, melt the butter with the garlic, onion, and basil. (Don't keep this in the pan for too long, or you'll burn the garlic and it'll taste bitter.) Pour the herb butter into another dish and put it in the fridge to cool.
Preheat the oven to 350 degrees.
Roll out the pizza crust dough onto a baking sheet and spread the herb butter over the dough with a spoon. Sprinkle and spread the olive oil over the dough. Put the chicken on top. Dot the Ricotta cheese evenly over the entire crust. Top this off with tomatoes, cilantro, parsley, and Italian mixture or Parmesan cheese.
Now pop this sucker into the oven for 15 to 20 minutes, or until the crust is brown.
Pair it up with a merlot or cabernet sauvignon and you're good to go.
