Everything is crazy. I am having hell moving money around, mostly hell trying to get money into the US to pay bills and the like... thanks patriot act....
The Jerusalem Artichoke aka Sunchoke should now be know as the Fart-a-choke. Oh my god the amount of gas they produce is amazing if we could tap it we would easily be able to solve a third world countries energy needs with just a few people eating them... I used part of two to make a pot/ tray of stuffing, they overpowered all the other flavors and my stuffing came out all artichokey instead of being much more balanced, add to it the gas factor. I almost feel sorry for my flatmates and my students today.
Does anyone else eat them? Have you found a way to deal with the gas they produce?

the real surprise is this Armenian bread that resembles flour tortillas, except that it is way too thin.. due to this and its many other culinary uses I am on a quest to find Lard... it is here somewhere and has like three different names...
I also found a new evil
Snickers with sunflower seeds instead of peanuts... they also have one with hazelnuts.... evil and addictive..


Now I am in serious need of a gym...
Even if I have dropped 4 inches off my waist line since leaving the USA and being in countries where you can walk and actually get somewhere instead of having to drive and sit and wait... it is doing my body a world of good

I did it. I made pancakes in Kiev. I had them for breakfast with the Raspberry syrup I made, and black coffee..
I feel full and happy, it is the little things that keep me sane when I can not read or speak the local language. I also spent a chunk of the day studying the freak alphabet again.. I am just being slow picking it up..I don't know why.

I did not eat the whole stack... I thought about it but a man does have to know his limits....

Pancakes dammit... Those things are freaking crepes! I wanted pancakes before I left for Russia. My now bugged out traveling companion the one that found the crappy job in Perm insisted that there was the wonderful place for breakfast. That it was so much better than IHOP (the international house of pancakes) (also known as Lewis Black's health club) I agreed to try it. They didn't have pancakes.... I haven't had pancakes in months. Today I made Raspberry syrup (little less than 2 liters), and Alton Brown's Instant Pancake Mix.... The bitch is I am out of eggs and milk....


Ingredients
• 6 cups all-purpose flour
• 1 1/2 teaspoons baking soda (check expiration date first)
• 3 teaspoons baking powder
• 1 tablespoon kosher salt
• 2 tablespoons sugar
Directions
Combine all of the ingredients in a lidded container. Shake to mix.Use the mix within 3 months.
"INSTANT" PANCAKES:
• 2 eggs, separated
• 2 cups buttermilk
• 4 tablespoons melted butter
• 2 cups "Instant" Pancake Mix, recipe above
• 1 stick butter, for greasing the pan
• 2 cups fresh fruit such as blueberries, if desired
Heat an electric griddle or frying pan to 350 degrees F. Heat oven to 200 degrees F.
Whisk together the egg whites and the buttermilk in a small bowl. In another bowl, whisk the egg yolks with the melted butter.
Combine the buttermilk mixture with the egg yolk mixture in a large mixing bowl and whisk together until thoroughly combined. Pour the liquid ingredients on top of the pancake mix. Using a whisk, mix the batter just enough to bring it together. Don't try to work all the lumps out.
Check to see that the griddle is hot by placing a few drops of water onto to the griddle. The griddle is ready if the water dances across the surface.
Lightly butter the griddle. Wipe off thoroughly with a paper towel. (No butter should be visible.)Gently ladle the pancake batter onto the griddle and sprinkle on fruit if desired. When bubbles begin to set around the edges of the pancake and the griddle-side of the cake is golden, gently flip the pancakes. Continue to cook 2 to 3 minutes or until the pancake is set.
Serve immediately or remove to a towel-lined baking sheet and cover with a towel. Hold in a warm place for 20 to 30 minutes.
Yield: 12 pancakes
Note the bottom where it says you need two eggs and Buttermilk.... Where the frak do I get buttermilk? Why Buttermilk??? Argh... I am just going to substitute regular milk and do the curdling trick to make fake buttermilk...

I did a little cooking tonight for dinner. I made a classic American dinner, roasted chicken and potatoes with rosemary and gravy... My flatmate hadn't had anything like it in at least a year. He happily devoured half of the tray....

I started compiling a list of things I want/need here in Kiev. It is longer than I was expecting, the curse of cooking... Damn, damn, damn now I have to translate the list and find pictures to make sure that I am using the correct word... argh.

I've been cooking. Anyone in Kiev want some pineapple upside down banana cake? the last thing I need to do is eat the whole damn thing by myself... It is good enough that I considered doing just that.
