Late May Record Breaking Freeze expected locally in central PA Mtns...
So I've gone back into Full Winter Mode:
That's my signature Siciliano pasta sauce just started on back burner:
2lb Hot Italian Sausage rough chopped. 1lb Ground Beef, 3lb ea yellow onion and green pepper rough chopped, whole garlic bulb minced, Tbl ea oregano, basil & cilantro, 2 lg cans crushed tomatoes + reserve a can tomato paste and water as thickener later. In a 3qt heavy pan brown the Sausage & Beef in 2Tbl Olive Oil, drain out 1/2 fat, toss onions in hot pan with meats turn off heat while you open cans, add crushed tomatoes and the rest *no paste yet!* and simmer covered on low 30 minutes stirring 1/2 way. Add paste and enough water if too thin for your liking. Season to taste. It should have a bold bright flavor with the chunks of onions & peppers still having some bite
On left is a Chicken casserole I nabbed a big chunk from for lunch, and front is nanner bread makings!
