Simple throw-together for those occasional "everybody from last night slept here" mornings...
To a box of 'Jiffy' Cornbread recipe I added an extra egg, extra 2 Tbl's each of flour and extra milk. Whisk eggs + milk then GENTLY fold in the dry stuff in a bowl and set aside to "slake" --your new word of the day-- while you turn on 350 oven to pre-heat.
In a 8" round or square cake pan randomly sprinkle 1/4 cup firmly packed brown sugar -- it's also dynamite with wild buckwheat honey instead!-- and 3 Tbl's chilled butter cut into crumbles, and a small can of drained crushed pineapple (adding cherries or nuts optional) place pan in pre-heating oven for a minute to gel that mix,
When oven dings, gently spoon dots of cornbread mix around the pan. It'll be kinda thick so don't worry about spaces it will melt in and gel as it bakes!
350 for 20-25 minutes until top has a nice orange colored crust. Invert immediately onto a heatproof plate - leave pan on top about 3 minutes then serve warm.
It's VERY rich so a brownie sized piece/person is plenty! Cheers!
