I've had best luck adding the baking soda to mashed bananas while creaming butter/brown sugar it helps break down some of the fiber and gives some extra lift also beat the eggs/butter/sugar mix until it reaches soft fluffy stage then just ever so lightly fold in bananas and flour/salt mix to maintain volume.
