I just saw on some thread that you worked at an Elks Lodge before this latest cruise job. I have cooked at two Elks clubs in Illinois and was exec at the last one. Service clubs are becoming a rarity these days so it's cool to know someone else that has worked them.

In the end, I bailed due to too many people in positions of power always trying to muck with me, cutting my hours down from 40 to 30 a week, and too much interference

Yeah. Working for a board of trustees is a pain in the ass. The one I ran the kitchen at is failing. I made it two years and built up their bqt business but before me they had 4chefs in two years and the same happened when I left. They are currently without a chef. Again.
