I just wanted to update tonight to say that at the moment, I'm eating a purple potato. When I bought this thing at the market, I was planning on the same disappointment doled out by red potatoes in that the color is only on the outside.
Imagine my surprise when I found that this wonderful tuber is purple all the way through! I'd say I got my money's worth for the extra 20 cents per pound over Russet potatoes.
