Ah! So happy Pink Pearl apples are in season!!
If you haven't seen them before, the flesh is a rather shocking pink color. Since they don't oxidize they make wonderful sorbet. I'm trying to round up as many as possible for the restaurant....I'm kind of a hoarder when it comes to ingredients I covet.
