cooking dinner for my father tonight. stuffed shells, which is not vegan. i almost nearly am but i refuse to force anyone into liking tofu if they just can't swing it. though i am sick of seeing people's disgust or hearing it verbally. my aunt, a definate rocket scientist, said, "oh i couldn't do that!" i responded with, "don't worry, your not alone. not many will." a bit of anger in my voice. so, i have loosened up a bit when i am out of the house. esp. when we went to maine. but i continue to always cook vegan for myself. (my son gets bits of cheese and a great forcing of beans and veggies his way) my heart, however, is nearly broken from trying so hard to make healthy meals only to have him, at best, use the food as a kind of lumpy finger paint. or he will take his food bit by bit and drop it on the floor. the stinker.
