I think it is time for the real test. The last cheesecake I made (yam and bourbon) worked out, but I must admit I was a bit nervous waiting for the results. (although I had a feeling it would be great (sorry-ego) Because of my education (ha-ha) the one thing I am supposed to excel at is Wine, so it is time to incorporate it into my cheesecake. I am thinking either a late harvest Zinfandel or a Reserve Port, and of course the pairing (besides for cheese) would include chocolate, berries and nuts. I am actually a bit excited about this one, since there are so many possibilities. This should be incredible !!!!!!
