This one is balls out. Pan seared duck breast with a blackberry bourbon glaze, Yukon gold potatoes and onions fried in duck fat, sautéed shittake mushrooms, blue vein Brie cheese, micro pak choy, and a ginger vinaigrette. Definitely some of my best work. However, this week we sold not a single god damn one. Not one. I was so fucking disappointed.

@oneimill My thoughts exactly. I love by some lakes, and the geese and ducks are fucking everywhere out here. But I still have to pay out the ass for duck meat or foie gras. Puzzling, to say the least.
