) but I'm so very happy to get them now!
This recipe is similar to my lemon white chocolate, but it is PERFECT! One of my best, I think. :3
I made them for my mother today... she was diagnosed with breast cancer recently (only told me this past week...) and she just had surgery to remove it yesterday.... She's doing okay, just tired and sore. We're all waiting anxiously to hear back about what her treatment will need to be based on the results of the surgery...
SNICKERDOODLES!!!
3 1/2 c. flour
1T. baking powder
2 t. baking soda
1/4 t. salt
1/2 t. cinnamon
1 c. butter
2 c. sugar
2 eggs
1 T. light corn syrup
2 1/2 t. vanilla extract
+ extra cinnamon and sugar for rolling (a few T. worth should be enough)
1. In a small bowl, stir together cinnamon and sugar for rolling cookies and set aside.
2. Stir together dry ingredients. In a standing mixer, cream butter and sugar together until fluffy.
3. Add eggs one at a time, corn syrup, and vanilla and mix until blended.
4. Chill dough for an hour.
5. Preheat the oven to 375 degrees.
6. Roll balls the size of ping pong balls, then roll in cinnamon/sugar mixture.
7. Place on a sheet 2 1/2" apart and lightly press a thumb down to slightly flatten.
8. Bake for 10-12 minutes until puffed and cracked on top.
9. Let cool on the pan for a few minutes before removing a wire rack to cool completely.
ENJOY!
***I like to eat them soon after they get out of the oven because they're extra soft and gooey!

I hope that everything turns out well for your mom. I know how scary that waiting can be. And I'm definitely going to use this recipe!

So your birthday is 2 weeks for the 1st! Well I guess ill just have to do something special for ya then
lol Also these cookies look amazing! I just wish I could have cinnamon...im highly allergic to the stuff ugh it sucks!
