So I bought a twenty centimeter (eight inch) Global chef's knife on Friday. It had something to do with my reading a certain book not so long ago...
I couldn't believe how much easier chopping, slicing and dicing was when I started out and I'm still a bit amazed at how sharp the blade really is... To be honest, I'm looking forward to using it again -- which is odd, in my mind anyway, because it's just a knife.
Hell, I'm even thinking of getting a couple better saut pans in a few days...
