I quit fucking LaPaz.
I worked ther for 5 years and ate shit from them pretty much the entire time. Glad I'm out. Liz is still bartending there though. She makes good tips.
I've moved on to a corperate place here in Fredneck. I don't have any creattive freedom, but the money and benefits kick ass, and I don't have to put up with any personal shit from a resteraunt owner determined to run his own company into the fucking ground.
Anyone here who has done any serious time on the resteraunt industry can attest the most (not all) owners are shitheels. The mentality that goes into wanting to open a business that has a 76% failure rate pretty much guarentees it.
B]There are 2 types of freestanding resteraunt owners
Chefs who have worked there asses off and are creating thier own vision based on a lifetime of work.
Good: Know the business, understand the shittiness of the environment, and generally respect the people who bust thier asses for his business.
Bad: Generally, total Nazis about how they want things done. Zero tolerance for anyone attempting to alter the way they see thier business being run.

The other is rich assholes who made thier money in some unrelated industry who decide they want to be "entreprenures" (sic) because they have half a million dollars burning a hole in thier pockets.
The Good: If you know what your doing, you can have a lot of direct influence on the company , and if you have a creative idea, you may be able to impiment it....(unless it starts losing money)
The Bad: Most of them are fucking idiots. (Hence the 76% failure rate) You are also subject to the personal whims of someone who may or maynot have ANY idea how thier very own business need to operate.
Frequently lapse into the delusion that the ownership is more important to the people producing the product they sell. (See famous quote below.....)
No Benefits.... No Insurance... No Security......Nothin. Here's your substandard paycheck, fuck off..... BTW: Can you work a double on Friday? Our Broiler guy went on a crank bender and can't work.... Yay.
