I am so bummed because tonight is the night that Slayer is coming to HOB and I don't get to go.
My husband was promoted in late December, but they still haven't given him his Ssgt pay yet. They also made him pay for his hotel in Texas out of pocket and still haven't reimbursed him for it yet. If the military screws up your pay they give you back pay but it can take forever to get it. So far they owe us about $900 in back pay and for the hotel fees. I wish we could have gotten it sooner so I could go see one of my favorite bands play. This was something my husband and I were going to do together in clebration of his promotion. He made Ssgt a lot sooner than most people do.
It's all good though, because right now I'm eating the most delicious cupcakes I've ever made. I think that most premade cake mixes are bland and every time I try to make a cake from scratch the recipes I use turn out kind of dry and with not much flavor. Anyway, I used a cake mix but I didn't follow the directions on the box and added my own ingredients. Because it's so good, I thought I'd share. You need a box of Duncan Hines Golden Butter cake mix and a pint of Ben & Jerry's vanilla ice cream.
1 box cake mix
1/2 cup of ice cream
1/2 cup of water
3/4 cup or 1 cup of butter (depending on how much butter you like) (1 1/2 - 2 sticks)
3 large eggs
icing or topping of your choice (I used Nutella)
also I added a few chocolate chips to some of them but they sunk to the bottom; still good though
First, preheat your oven to 350 degrees F. In a large bowl, pour in cake mix, butter, water, eggs, ice cream and chocolate chips if you're using them ( use a whole bag if you're putting chocolate chips in all of them). Beat with an electric mixer at a low speed untill moistened for 30 seconds, then turn it up to a medium speed and beat for 4 minutes. Pour the mix into baking cups in a cupcake pan. Bake for about 12 to 15 minutes. You'll know they're done by sticking a fork in one of them and it comes out clean. Add topping of your choice.
For high altitudes follow the high altitude directions on the box.
Cupcakes do not make up for me missing a Slayer show, but they do make things a little better.
