Yes I'm goofy, tired and flushed! -_- this was the year I started working hotline from pastry and garde manage . I work mostly slow nights, but it's still at the busiest place in town- where even in our off season we do 300 plus covers on a Saturday . The sauté corner is over 100 easily . My oven is a "balmy" :P 600 degrees and the occasional oil spatter keeps you alert for sure .
Needless to say I'm feeling pretty pumped and proud of myself tonight! My sous chef told me that I "killed it" .

Summer grill at a steakhouse was unbearable heat, especially since the grill was next to a 4 bay fryolator.
