today we're going to sample salted Bretagne cod at a french friend's house. could be good, could be disturbing. i'm sure it won't be as terrifying as lutefisk, not that i've ever eaten that either or ever would, now that i know what it is; a real horror film of a meal, sorry to any scandinavians. let's call it cuisine of desperation, like pigs feet or head cheese or witchety grubs.

I worked at a Swedish restaurant once and I was told once that dogs used to pee on the lutefisk outside the old-time Swedish markets. The customers liked the flavor (which is already pretty much along dog-pee lines) even better.
