So........ on Monday I was back in the hospital (everything is okay, thank goodness) and the doctor told me that if I go into labor from here on out, they won't try to stop it because the risks associated with arresting labor are greater than the risks of delivering this early. Shit just got real, yo. eeek

Picking a theme for the baby's room, sold the Miata last week, starting birthing classes on Tuesday.... shit's getting real, y'all.

I get to meet our son in less then 11 weeks. Sooner, I think. While my health is still a little touch-and-go, his is wonderful! I'm excited.

I think I learned an important lesson this week - even though I feel like my health is getting back to normal, I really need to not push myself too much while pregnant! I was active 3 out of the first 4 days this week, and I feel so sick and exhausted now. I swear I'm going to bed at 8 tonight!

Lasagne roll-ups are the easiest and most gratifying thing you can ever make, ever.

Ingredients:
- jar/ can of pasta sauce (or make your own if you've got the time or inclination)
- can of lentils - drained & rinsed
- box of lasagne noodles
- tub of cottage cheese
- grated mozzarella cheese
- parmesan cheese

Step One:
- in a big pot, boil water and cook lasagne noodles until tender. Make sure when they're cooking to stir them so they don't stick together
- once they're al dente, drain, then put them back in the pot and toss with olive oil to keep them from sticking

Step Two:
- in a pot on the stove, heat up pasta sauce and add lentils (they make the sauce "meatier")

Step Three:
- on a cutting board, layout a few noodles
- spoon on them heated sauce and some cottage cheese
- roll them up and affix them with a toothpick, then set them in a muffin tin
- once you've got the muffin tin filled with rolls, top them with more sauce in the middle, then add the mozzarella & parmesan cheeses on top

Step Four:
- heat in the oven on about 350 degrees until everything gets all bubbly
- eat and send me thanks. biggrin
