Okay find Claudio Villa - Stornelli Amorisi - Big Night Soundtrack
Turn it on, it's time to make dinner....
....tonight, Spaghetti Ciocara (cheeochara)
Start with hot italian sausage (whatever you can get) pulled out of it's casing
In a hot pan cook till well done with chopped cabbage, olive oil, peperoncino (chillies), and salt.
When cooked thoroughly, add blanched cubed potatos, minced garlic, chopped parsley, and white wine. Cook in the pan for another minute or so, tossing aggressively.
Through in an appropriate amount of spaghetti and .... CIN CIN!!
Top with fine grated Parm. Reggiano, the undisputed king of cheeses.
Perhaps the pasta could be a bit on the lean side for all you carb watchers....jeeze.
I can't possibly do quantities, because I don't cook that way. If you were beside me I could say, "add this much of this and that much of that".
