Seeing as it's a sunday for me, and the second day of rain, I decided that I ought to make some nice comfort food and enjoy the rest of my time off with a cheap bottle of white wine
This time around I went with making ravioli, cause it's been forever and a day since I've done it, and a good excuse to bust out my xmas gift!
Now, my uncle got me a pasta roller as a gift and I've used it once or twice since then, but just to do spaghetti and the like. It's a handy little device since I don't particularly have the room, or patience to roll out the dough with a rolling pin.
the dough was simple enough: 3cups AP flour, 2eggs, some salt, and enough water to pull it together. The next thing to do was make a filling. So I went to my local mart and looked around. There was a sale on Hillshire Farms Polska Kielbasa, so I started with that. I wanted to keep it simple so thought about going with a cheese. Decided on a feta cause I hadn't had in awhile and didn't know what to expect from it when hot. I mean, half the fun in cooking is the experimenting! haha
Once I got those home I sauteed up some shallots and half an onion. Threw the sausage in and browned that, deglazed the pan with a bit of the white wine I had bought. Once it was nearly au sec(nearly boiled out) I threw in the feta and let it melt down a bit and killed the heat.
Once it cooled off a bit, it was time to lay out the strips of pasta and spoon the filling in....
All there was to do now was boil some water and heat up some marinara, then enjoy! haha
