I have been experimenting with chilled sesame udon noodles and they have turned out pretty well. First, I boil the udon for 10 minutes. Then I rinse it first in cold water and then again in regular water. I then dry them with a paper towel. Next, I add sesame oil to coat, soy sauce, and extra hot chile powder (just ground chiles nothing extra). Once that is all mixed I add sesame seeds that i toasted. After that is all done, I put them in the fridge to chill and kinda marinate (the longer the better, so the noodles really soak in the flavor).
They are good with tofu/or chix cooked with Vinegar and rice wine with ginger and garlic, or just by temselves. Let me know if you try it out...
