yesterday was so very productive. i was up at ten in the morning, which is very unusual for me. i was in the middle of typing up everything i did, but i realized it's not really very interesting to read. in a nutshell, we got a new xbox game, and ran into lotus downtown. the toothpaste story is also boring. fuck.
i made the most delicious oatmeal raisin cookies yesterday. i don't care what anyone says -- i love oatmeal cookies, and these are yummy, cinnamon-y, chewy oatmeal cookies. i'm gonna post the recipe because i'm pretty sure i remember it by heart. ^_^
i think i've figured out what i'm doing with the next year of my life, which is a nice relief. i can breathe easier now.
vegan oatmeal cookies
ingredients
1 cup softened margarine
1 cup white sugar (rogers organic works well)
1 cup brown sugar, gently packed
3 tsp vanilla extract
2 tbsp soy/rice/oat milk
6 tbsp applesauce
--
2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
3 tsp cinnamon
--
2 cups oats
1 cup raisins (or chocolate chips) (optional)
directions
1. preheat oven to 350 degrees fahrenheit.
2. combine margarine, white sugar and brown sugar. beat until creamy. add vanilla, milk and applesauce; beat until even.
3. combine flour, baking soda, baking powder, salt and cinnamon in a separate bowl. mix until even.
4. add dry ingredients to wet and mix well. stir in oats and, if desired, raisins/chocolate chips, until evenly distributed.
5. form small balls and space evenly on ungreased cookie sheet. bake for 10-15 minutes (cooking time can vary greatly; check on your cookies!). makes a fucklot of yummy oatmeal cookies.
i'm sure they work just as well with dairy milk, too.
