so ive been offered the executive chef position at a hole in the wall dive bar, the kinda place would be big with hipsters if we had any in this area. of course they would probably just hang out and complain about the lack of micro-brews. but anyways this little dive bar and grill is substantialy underfunded and by that i mean understaffed as well so if i take the job i'll be working for min wage. ill also be the line cook, the waiter, and possibly on some occasions the bartender, least till business picks up and the owners can afford to hire help.... but i'll be able to call meself executive chef right?

will they give you say and the ability to change the menu?
sucks that youd need to work front of house.... but if itll make you happy it would be worth it.

I can see pros & cons to this. Pros: the title is pretty sweet, you could win punters over with your cooking, swing the bat, make it your own. Cons hard work, minimum wage. Hmm. You could make it work, at the very least it's another feather in your chefs hat.

i agree with deucomatic... but also see that as a chef, to be so stifled as to what you can and cannot do while 'executive chef' can get frustrating.

rock the title and make those tips for a little while and if it becomes too much, then you have that title and feather in the hat, as deucomatic said... then use it to move further an higher up somewhere else.

alaska is fucking beautiful. breathtaking views everywhere... going to the national park to begin work tomorrow..

Strange...Methinks it has something to do with the fact that the US was more of a melting pot than Australia. Also the face that Australia was a colony and taught 'The Queen's English' with ruthless efficiency.
