Mandatory food entry: roasted butternut squash in a tomato cream garam masala sauce over millet.
So last night I played what's in the pantry and came up with a dish that seems fairly tasty. I roasted two butternut squash for an hour. I had sprinkled them with cinnamon and brown sugar. Then I prepared a sauce by first sauteeing garlic in butter and oil, then added a can of petite diced tomatoes to which I added garam masala, turmeric, powdered ginger, cinnamon and brown sugar, then in the end a healty swirl of half and half. I then poured the sauce and the squash which wound up rather moist and mushy to a large bowl of millet.
Now I have leftovers for days.
Well it's off to bike in the sub-freezing Chicago cold. Hello December.
