Ahh cheese. I love cheese. Last night at the grocery store I was introduced to a most divine English Stilton. The wonderful folks at Neal's Yard Dairy once again have stunned me with their Stilton Colston Bassett. It's nice and pungent, not quite as heady as Gorgonzola. Last night I had it with fig spread and crackers. Tonight I had it in a salad with spinach, red peppers and pears. Delish.zineboy

For the soup I started by sauteing shallots and garlic and fresh ginger in butter and olive oil. Then I added a chopped pear and some cinnamon. Then I put in delicata and buttercup squash and cooked that down some. Until I finally finished it off by simmering the mixture in a vegetable broth for about half an hour. Lastly I pureed it the lot and had a delicious and tasty soup. Oh yeah there was also a couple dashes of nutmeg and a sprinkling of brown sugar. Yum
