I am very fond of making icebox shortbread cookies. The basic recipe is so simple and easy. Butter, confectioner's sugar, pinch of salt, splash of vanilla and flour.
Then the flavor combinations can be intriguing to mix in. I have done lemon zest and then rolled the logs in poppy seed. I have also mixed in maple syrup and rolled that one in toasted walnuts. I did a ground pistachio. I have done an earl grey shortbread.
And yesterday I just did the basic with a slight addition of mini chocolate chips.
