So, just over two weeks ago my wife and I were at a restaurant I have admired for awhile. They were busy and we ate at the bar. The guy behind the bar kept apologizing for the wait and his lack of service. We had no where to go and all night to get there so we didn't care. It was a nice night for us. The guy behind the bar, Boris is his name, looked flustered. I stated that I saw the help wanted sign and inquired if that meant in the kitchen as well. He said yes & asked if I knew someone. you see he didn't expect my wife or I because you don't eat at a place like this unless you have a job already. It's not cheap and we only go there on special occasions and stuff like that.
I told Boris that I was interested in a cooking position for nights. I have a good job but have always wanted to start my own restaurant or something like that. He asked if I was a good cook. I said yes and my wife said great cook. Boris asked me to come by the next night and take a look around... kick the tires if you will. I have been there now 12 days out of the last 16 days. They are closed on Sundays and were closed for Labor day too. Tonight will be my first night by myself, in the back. you see, Boris' mom & dad have been the only cooks for the last year and this last month the whole shop has been with out 2 waiters, a hostess and a dish washer. I have been washing dishes while learning the menu. The next two nights will be me and the manager/waitress. One in front and one in back of house. Wish me luck. If I can do this I will start to get things ready for my own gourmet food truck. Something I know the world has had for awhile but Odessa Texas has never seen.
