I'm putting together a cookbook of sorts; It's called the 'Underground Cook Pamphlet'. Most of the recipies combine different types of meat with various fruits. I decided to post one of them here for your enjoyment.
Sweet Georgia Brown Chops (sorry no Globetrotters)
Stuff you'll need
4 thick boneless pork chops
1 apple (tart apples work better)
Some dried cranberries (some folks call them Crasins)
Pecans, again just some
(for those of you wondering how much 'some' is, it's just that. Some. Could be more, could be less, depending on your tastes)
Brown sugar, I used about a tablespoon
Molasses, you'll need about half a jar
What to do
Preheat oven to 375
Cut the apple into small pieces (don't forget to throw out the core jackass); then place in a bowl with cranberries, pecans and brown sugar. Find something to mash/stir the stuff in the bowl together. I used the top of a meat tenderizing mallet. If you have a mortar and pestle, that would work nicely. Be careful not to make apple/cran sauce or pecan butter, just enough to get all the flavors acquainted. (yeah, I said it; bite me).
Next, butterfly-cut the chops; if you're not sure what that means, it's simple; cut the chops almost in completely in half by it's thickness, and open them like a book. You know like Hamlet, the Dungeon Masters Guide, Batman, Captain America, Skin Two. Anyway, where were we? Oh yeah, once you have cut and opened the chops; spoon some of the stuff you just mix/mashed together onto the chops and close the book.
Grab yourself (no, not like that you perv, at least wait until you're done) a baking pan that will fit all four (or however many you decided to cook, but I told you four) chops, and line it with aluminum foil. Place the chops in the pan and paint with molasses. If you have a pastry brush or a clean paint brush; that's awesome. If you don't; just pour a little molasses on the chop and spread it around with the back of a spoon. Once you have that accomplished, put the pan with the chops in your smartly pre-heated oven for about 15 min. If you still want to grab yourself, this might be a good time. After that quarter hour has passed, take the chops out and enjoy.
