This past weekend was filled with food and fun.
Friday I ran a lot of errands. I had my car serviced. I checked out a local "One Buck" shop with my roommate. We had so much fun buying and laughing at their merchandise. I bought an awesome pair of Obama earrings for 75. I spent the evening making vegan mexican pizzas and baking blueberry cobbler.
Saturday I relaxed and made "Skinny Bitch" Potato Scramble. It turned out much better than I thought it would.
Here's the recipe:
Potato Scramble
Serves 4 to 6
8 oz vegan Jack cheese, shredded
7 to 8 oz. firm or extra firrm tofu cut into 1/2 inch dice
2 tomatoes, cut into 1/2 inch dice
1 tsp. sea salt
1/2 tsp. pepper
1/2 tsp. paprika
1 Tbsp. refined coconut oil
8 oz. vegan breakfast sausage, crumbled or cut into small bite sized pieces
1/2 onion, cut into 1/2 inch dice
2 cloves garlic, thinly sliced
In a large bowl, combine the cheese, tofu, tomatoes, salt, pepper and paprika: set aside.
In a large nonstick skillet over medium heat, melt 1/2 tablespoon of the coconut oil. Add the sausage and cook according to package directions. Transfer the sausage to the bowl with the cheese mixture. Add the remaining 1/2 tablespoon of coconut oil to the skillet and melt over medium heat. Add the onion and cook, stirring occassionally, for 1 minute. Add the potatoes and cook, stirring occasionally, until the potatoes are tender, 15 to 20 minutes. Stir in garlic and cook for 1 minute. Stir in the cheese mixture and cook, stirring occasionally, for 2 to 3 minutes, or until the mixture is hot.
Sunday I hung out with my dear friend Wendy.
We spent the day shopping. I bought a ton of cosmetics. First stop, the local MAC store where I purchased the entire MAC Style Black Collection. Second stop, Walmart. I normally HATE Walmart but I had to check out the newest Hard Candy collection. I am glad I did. The pieces are priced $5.00-10.00. I went a little crazy and bought several pieces. Third stop, ULTA. This trip was short but sweet. I bought Essie's Love, Beverly Hills xx Nail Polish. I've been eyeing this polish for months and decided I HAD to have it. Fourth (and final) stop, more nail polish! I bought two bottles of China Glaze. I was so happy to find the hard to locate "For Audrey". I also picked up "Ruby Pumps". I finished the day with Dexter, Desperate Housewives and baking blueberry muffins and banana muffins. Yum!
