Life is boring and predictable. To pass the time I cook, bake and read. This week, I made a couple of vegan pizzas using whole wheat flour and unsweetened soy milk to make the dough. I used Follow Your Heart Vegan Gourmet Colby Jack cheese and Light Life Smart Deli pepperoni on the pizza for my room mate. My pizza was chocked full of garlic, oregano and basil and topped with Follow Your Heart Vegan Gourmet Mozzarella cheese. For dessert, I made blueberry cobbler with a whole wheat crust. Both recipes I made up as I went along. I am sort of an intuitive cook. Today I am making a five bean chili with Moringstar Farms Vegan Chik'n strips and tomatoes. For dessert, a pineapple upside down cake.
The book I am currently reading is Got Fight? by Forrest Griffin. Some people find it strange that I am a huge mma fan. I studied muay thai for a year before my work related injury back in April. I hope to return to it when I am fully recovered.
