Ok, before you start...no this is not one of those self righteous blogs about how, "OMG, I'm vegetarian. Everyone else in the world is a bunch of killers." I can't stand those. This is about sharing of recipes. So I am vegetarian on and off and I do eat fish too, hence the Pescatarian. I have found it very hard to find good food without a ton of meat on it. This is going out or healthy home-cooked meals. Only way is if you eat basically a black bean burger and steamed broccoli. Um...I enjoy food. So, I started googling a ton of different Asian foods and how to make them. I also have a few friends that I work with that are Korean...that helps. I am able to do meal prep and omg the food. Its so good. I always struggled trying to find something healthy (by healthy I mean not full of preservatives and basically plastic that you're eating). My boyfriend does eat meat and he loves this stuff. If you are someone who is vegetarian and trying to find good and tasty foods.....look up these recipes. Also don't forget to hit up your local Asian Market to find most of the stuff in here!
So see you don't have to be limited. Share one of your favorite meals to make everyone ^-^
Ok, so this is Japchae! Its sweet potato noodles mixed with vegetables that are cooked hibachi style.
So this is a Kimchi pancake. Holy cow is it good, and next to it is just a traditional Korean Dipping Sauce. Yes, it has really spicy Kimchi in it but omg super tasty.
Some Spicy Tofu (the other white meat) Ramen- chucked full of veggies and soymilk and super spicy. Super tasty dish! Shiitake mushrooms and green onions help too
So, this was one of my favorite meal preps. Vegan Japanese Curry. OMG! Will forewarn you if your allergies are bothering you, or if you have a stuffy nose. This will for sure clear you right up!
This is Gochujang marinaded Tofu over rice with some steamed snowpeas. This is absolutely delicious.
