Banana and White Chocolate Crepes

2 Large Bananas
1/2 Teaspoon Vanilla Essence
1/3 Cup White Choc Bits
1 Cup Shredded Coconut
2 Tablespoons Caster Sugar
8 Spring Roll Pastry Wrappers, Thawed
1 Egg White , Lightly Beaten
25grams 3/4 Ounce Unsalted Butter, Melted
Icing Sugar ,To sprinkle it on
Vanilla Ice Cream , To serve
200g Caramel Squares(candy) (optional for caramel sauce)
1/2 cup cream. (optional for caramel sauce)


1. Place bananas, essence ,white chocolate ,coconut and caster sugar in a medium bowl.Stir to combine.
2. Lay one wrapper on a flat surface with on corner pointing towards you. Cover remaining wrappers with a damp cloth.
3.Brush edges of wrapper with eggwhite.
4. Place 1/4 cup Banana mixture in corner of wrapper .
5 From corner,fold edges to enclose filling.

Place Banana Spring Roll on oven tray aligned with baking paper . There should be 4 rolls

Brush rolls with Butter

Cook in hot oven 220 degrees celcius or 440 degrees fariegnheit for 15 minutes or until golden brown. Meanwhile to make Caramel Sauce stir Caramel Squares in a small saucepan on low heated intil melted. Then add cream and allow to cool for 10 minutes

Remove Crepes from oven and serve with Caramel Sauce And/or Vanilla Ice Cream
