Hey pals!
I'm just chilling in bed watching Grimm and figured I should probably get started with these things.
I'm a tiny bit late for this topic that @rambo @missy and @lyxzen chose for last week, but what better way to start than to talk about one of my favourite things in the world: food!
I'm totally going to switch it up a little though, I'm doing like a last day of meals, like I know I'm about to die and I want to cram in all the good food before I kick the bucket.
So first up is a new favourite of mine: porridge with cinnamon apples on top.
I have this for breakfast most mornings nowadays, and it's seriously so damn good.
It looks a little sad, I know, but the taste of it is perfection on a bowl.
Now that breakfast is done.... OR IS IT?!

Second breakfast is pancakes with caramelised banana and fresh strawberries.
I actually only tried this recipe for the first time last week and it was incredible, especially since I used home grown strawberries (and mint but I chucked that out as soon as I took the photo). Making food with home grown ingredients is a new favourite feeling of mine.
I had to save this one off my snapchat because I forgot to take any other photos (for once).
Also, just because I'm an awful sweet tooth, I'd probably snack on one of these incredible apple and sultana cinnamon scrolls.
Lunch is veggie burgers with home made chips.
I'm pretty sure I crammed every vegetable in my fridge into this burger; mushrooms, spinach, tomato, cucumber, lettuce and a vegan burger patty... I could barely even bite it, it was so huge.
At the risk of sounding cocky, I make awesome burgers.
Then for dinner I'd have another new(ish) favourite.
These are basically just baked potato, cooked rice and onion mixed up with a jar of salsa and wrapped up taco-style in corn tortillas with mashed avocado (and a little bit of lemon juice) on top and some nutritional yeast.
I actually cooked these tonight.. so good.
The best part about this recipe is that it makes a buttload of filling so I can have this for three days.
I've been making this at least once a fortnight, it's so delicious.
Wash all of this down with about 4 cups of green tea throughout the day and I'd be so so happy.
I'm currently trying to find out some good ways of making dairy-free chocolate mousse, cause that's one of my favourite things in the world, so I'd tack that on after dinner.
And my favourite part about this is that I actually made all of these things!
Cooking is one of the things that I just love to do; I'm transitioning to a vegan diet and learning all of these new recipes and finding out ways to make my favourite things but using no animal products is incredible.
So all of these photos (except for Merry and Pippin, obviously) are vegan recipes that I've made!
It's so rewarding, especially when you get to cook for other people and see how much they're enjoying the food you've made.
