After the most awful week involving insurance companies, mall food courts, and getting most of our meals through a car window or delivered in a cardboard box, the husband and I finally had a chance to slow down today.
We went to Wild Oats and picked up some olives, the most fabulous Parmesano Reggiano, some really nice bread, and some organic vegetables. We came home and made dinner together while snacking on olive bar olives. We made a really simple fettucine alfredo, and it was just what I needed after this week.
And now I've got ratatouille roasting in the oven (sans nasty winter tomatoes) that will become roasted vegetable and cheese panini with peppadew peppers tomorrow.
