Before you bottle you add a little sugar. The yeast eats it and farts carbon dioxide. Since it has no-where to go in the bottle it goes into suspension. That way you control it through the amount of sugar added. And also for the record, alcohol is yeast poop.
I'm sorry you guys got lost on the way up. It occured to me that maybe I should have written out some directions since Barbara's is the kind of place you don't notice unless you know it's there. I'm really sorry.
