Once upon a time, I was a kickass chef. I still am, I guess. Just in a holding pattern. The only part of the restaurant biz I don't miss is the 70 hour, 6 day work week. I loved the adrenaline of Friday night on an hour wait and the printer spitting out tickets nonstop. I loved the heat and smoke and fire and smells. The transistion of raw product to edible pleasure, knowing that someone was having a sensory party and I was the ringmaster.
The writer Anthony Bourdain likens being a chef to being a pirate captain, and in some funny way that IS what it's like. A line crew is always half crazy, cranking out the beauty at 75mph until it's 1am and time to go drink your way down.

there was a movie theater i worked at in college for four years. it's where i met my ex-husband.
