Without much else to do last night, I spent some quality time with my smoker, from around 7:30 pm to just after midnight. I made a pretty basic dry rub for the meat, and then put together a marinade using soy sauce, worcestershire sauce, Spriracha sauce, and some Hoi Sin sauce. When I'm cooking like this, I don't really measure anything. It's a complicated procedure for me to make the same thing twice. I also took a couple of eggplants, split them, and added them to the smoker rack along with a couple of chickens, and a couple of pork tenderloins; both of them coated with the rub and marinade that I'd made.
Several hours--and a six pack of oatmeal stout--later, I pulled it all off and sliced into the meat. There's nothing quite as tasty as meat freshly smoked and still hot.
I put the eggplants away until morning and I just now finished with running them through the food processor with some lemon juice, garlic cloves, cumin, and tahini. Freshly smoked eggplant makes the most amazing Baba Gannouj.
Food--and drink, in my opinion--mirrors a great deal of life. You can spend your life grabbing a quick burger here and there or worry about finding meals that can be made as rapidly as possible. But the best food in life is created over a long span of time, with a recipe used as a guideline more than law, and finally, it's best savored leisurely and calmly. Too often, people throw food and drink past their taste buds without taking time to notice all of the different flavors in their mouths.
I think there is a lot to be learned about a person by watching them eat a fine meal or drink a fine liquor.
