First recipe is a comfort food... Tomato soup. This has been one of my favorite fall soups to make and always puts a smile on my face.
Tomato Bisque
1/2 cup chopped onions 2tb flour
1/2 cup butter 2tsp salt
1tsp dill seed 1/2 tsp white pepper
1.5 tsp dill weed 1/4 cup of chopped cilantro or parsley
Herb blend 4 tsp honey
5 cups Tomatos (Canned whole 1.25 cups heavy cream
or crushed) 2/3 cup half and half
4 cups of broth or stock 2 cloves garlic
can use vegetable or chicken broth 2 tb sugar (optional)
In a large pot saute onions and garlic on medium temp. in 6 tablespoons of butter add along with dill seed, dill weed and herb blend (1/4 tsp dry parsley, 1/4 tsp dry basil, 1/4 tsp oregono), for about 5-6 minutes or until onions are translucent. Add tomatoes and stock or broth and heat.
Make a roux by blending 2 tablespoons of butter and 2 tablespoons of sifted flour, whisk contstantly over low-medium heat for about 2-3 minutes, make sure roux does not brown, add to stock and blend with a whisk. Add salt and pepper (sugar if you want a little lower acidity) bring to boil, stirring occasionally. Reduce heat and simmer for 14 minutes. Add chopped fresh herbs, honey, cream & half and half. Remove from heat and puree. You may choose to strain if like a very fine and silky texture. Serve with any number of cheese on top. Best that ive found are good sharp cheeses. I love Romano Pecorino, Goat, and Sour cream. I also prefer lots of fresh Cilantro, both before the blend and a little fresh on top right before serving
Ok wines can be pletiful with such a dish as this a good Sauv-blanc would be nice for a summer dish especially with the pecorino cheese, esp. New Zealand like Alan Scott about $12
For fall wines A nice california Pinot Noir can be great but this is a wine that really needs a few bucks thrown at it to be really good L'Autome by Copain is about $17-$20 or the Jezabel from Willamette Valley Oregon about $15-$18.
And two last wines that are great values and great wines that would work great are Protocolo Red or white and Mas que vinos Ercavio, both of these are Medium bodied reds from spain, a greatly emerging country in the wine market, both wines run from $5-10 and cant be beat for the price. Let the Mas que vinos breath for at least 1/2 hour before enjoying. Most importantly share with friend.
