It's friday. No more homework to do, dead week is upon us. This means it's time to get brewing.
That being said I need to rack off one beer to keg today, and rack my starter beer off it's yeast cake so I have it to toss another beer onto tomorrow for fermentation.
This particular beer is a tribute to my best gal. Basically I'm going to brew an Irish Red to Wee Heavy standards to create a Wee Irish Red. Wholly appropriate in this case. The gravity will be rather high so it can age over time and be enjoyed at special occasions down the road. I think I got a pretty good recipe worked up for this one. It should come out rather rich, with a hint of dryness from the roasted malts. Pumpkin Blossom honey will assist in drying the beer out quite a bit while adding a subtle floral quality to the nose. I look forward to brewing this almost as much as sharing it with her.

2 lb. Carared
2 oz. Pale chocolate
1 oz. Roasted barley
1 lb. Flaked corn
1 lb. Cane sugar
3 lb. Honey
Hops, TBD depending on the store selection. Perhaps noble, perhaps british.
