Once upon a time, god knows how many years ago, in the French speaking part of Belgium, the farmers were busting their asses and pounding a kind of beer called Saison. Tolerable in alcohol, dry, and refreshing is the key to the style. The yeast lends fruity and peppery flavors. And of course they are notorious for being assholes to ferment right. Gotta start low (68) and move high (80) to get the strain to dry out. Temperature control plus constant rousing. It'll be like having a kid. Only one that gets me loaded. Oui oui.
