I should be working on sewing my halloween purse together but I'm sleepy and bored so there! Soon every retailer is going to have there halloween things out and thats all I can think about! I can't wait to go shopping. And then there's the candy....yum....I made vegan pumpkin cupcakes with a cinnamon glaze tonight and they were so good!! I love pumpkin things. I brings me to a happy place where the breeze is cool and the air filling your lungs is so crisp and clean...I'm still trying to figure out what to be for Halloween....hmmm....I'm running out of time.....
Recipe: Chocolate Chip Pumpkin Cupcakes
Preheat oven to 350 degrees....
Mix in order in a bowl with a fork (no mixer)
*1 cup canned pumpkin
* 1/3 cup oil
*1 cup granulated sugar
*1/4 cup soymilk
*1 teaspoon vanilla extract
*1/2 teaspoon baking powder
*1/2 teaspoon baking soda
*1/2 teaspoon ground cinnamon
*1/4 teaspoon salt
*1 1/4 cups all-purpose flour
After mixing fold in:
*1/2 cup chocolate chips
Bake for about 20-25minutes then cool on wire racks.
Cinnamon Glaze
Drizzle this mixture over cooled cupcakes
*1/2 cup confectioners' sugar
*1/2 teaspoon ground cinnamon
*2 tablespoons margarine, melted
*1 tablespoon soy milk
*1/2 teaspoon vanilla extract
