Chicken and Broccoli with whole wheat Pasta
Its GREAT fuel food!!! another winner before/after the gym This is a LOT of estimation, i just throw stuff in til it looks right to me. Add less or more depending on your love for each item
2 shallots or 1 yellow onion, minced
2-4 cloves of garlic (crushed, then minced)
T. butter and coat bottom of the pan with olive oil for cooking
1-2 lb chicken breast cubed (bite sized, but not too small)
1 c. broccoli florets
1/4-1/3 c. sun-dried tomatoes, julienned
1 T. dried Basil
1/2 c. white wine
3/4 - 1 c. low sodium chicken stock
1c. whole wheat bow tie pasta
1. Warm the butter and garlic in the pan, add garlic and onions and sweat the, until translucent.
2. add the chicken and quickly sear the outside for a minute or two, before adding the sun dried tomatoes and basil.
3. Let the flavors cook together for another minute or two, then add the wine and then the chicken stock.
4. Stir together and let it simmer for up to 20 min, while you cook your pasta al dente.
5. Add the pasta and cook in the juices for a minute.
6. If desired, add parmesan cheese, it goes nicely!
