Cinnamon Zucchini Bread!!
It sounds a little strange, but it doesn't taste like zucchini. It's sweet, kinda like cinnamon bread.
3 eggs
1 1/2c. sugar
2 t. vanilla extract
1c. canola oil
2 c. grated/shredded zucchini
2 c. flour
1 T. cinnamon
1/2 t. baking powder
2 t. baking soda
1/4 t. salt
Preheat oven to 350 degrees
1. Beat the eggs with the sugar in a standing mixer until combined.
2. Add vanilla, oil, and zucchini until fully blended.
3. Add dry ingredients in a separate bowl and whisk together briefly before adding into the egg mixture. Mix until combined.
4. Grease 2 9x5 bread pans and pour batter evenly between the two.
5. Bake for 45 min-1 hr.
6. Let cool on a wire wrack for a while and then turn upside down (letting it rest that way if it doesn't come out of the pan) until the bread falls out.
