Cookies!!!
This is a recipe that I have been developing for some time now. I only change one thing at a time so I know which change was positive. This batch turned out rather well, though I'm still not satisfied yet...
Lemon coconut cookies with white chocolate
You will need:
3 1/2 C flour
1T Baking powder
2t baking soda
1/4 t salt
1 C. butter
2 C. sugar
2 eggs
1 T. light corn syrup
2 t. lemon extract
zest of 1 lemon
1 C. coconut flakes (unsweetened)
1 1/2 - 2 C. White chocolate chips (depending on how much you like )
1. Combine dry ing: flour, baking powder/soda, and salt
2. Cream butter and sugar in a standing mixer until light and fluffy
3. Add eggs one at a time, then corn syrup, and lemon extract/zest.
4. Add coconut flakes
5. Add dry ing and then white chocolate
6. Chill dough for an hour
7. Preheat the oven to 375 degrees
8. Roll dough the size of ping pong balls and then roll in sugar, preferably sanding sugar
9. Place on a cookie pan (I use silicone sheets) and flatten balls slightly. Place about 2" apart
10. Chill tray for approx 5 min before putting it into the oven for 10-12 (really depends on the oven, mine are currently done in 8!) until puffed and cracked slightly.
11. Let cool on a pan for a few min. before removing to a wire rack.
