Huge cooker that I am, I'll share what I made last night for dinner.
Pineapple Molasses Beef Ribs (works with pork ribs too)
I made the marinate out of
1/2 c pineapple juice
2 T molasses
a cinnamon stick broken into pieces
2 star anise seeds broken as well
3 T light soy sauce
3 red chiles cut into pieces (tho I omit that when I'm eating them since I can't eat spicy food..)
2 T. peanut oil
1"x2" piece of ginger root peeled and sliced thin
1 onion peeled and cut into 8ths
I mix all that in a big plastic bag, stuff the ribs in, and let it marinate for 24 hrs....
Then I dump it all into the pan it sat in and let it come to room temp. before cooking it in a 400 degree oven for an hr (though I think next time I'm lowering the temp so the bones don't char quite as much)..
I pour all the liquid from the pan into a pot and add 2 more T. Molasses and boil it down for 8 minute or so til it becomes thick and syrupy. Then I pour it back over the ribs.... mmm.
