i've been a pastry school graduate for almost 5 months now.
i've been working at starbucks, and a part time job for a small business making cookies.
next week is my last week for the cookie company.
it was not challenging, the cookies were just okay, and my boss was a bad business owner.
i'm glad to be getting out. oh and driving there made a huge dent in my bank account seeing as gas has skyrocketed, and chicago has the highest gas prices in the nation. awesome.
anyways. i was debating on going back to school to get my bachelors in food science/nutrition and possibly food service management as well.
i'm not completely sure if i will go back this year, or next year. i kind of miss learning.
but i also feel like i want to go back to school because my current working situation is just kind of blah.
i have never worked in a restaurant or a hotel, and am considering "staging" [volunteering, working for free] to see how i like it. i always see job postings for pastry cooks at restaurants and hotels.
i feel that i can learn a lot working there.
but here's the problem. I'M SCARED.
i'm kind of shy, and soft spoken, and i'm scared of the environment i'll be in.
the fast paced environment, the people i'll be working with,
i'll feel as if i'm not good enough, or fast enough.
so, i have issues with myself.
here's the question:
HOW DO I GET OVER THESE FEARS?
i'd really like some input, especially from those in the restaurant/food industry.

Would love to help with some advice, but I am so bad I can barely answer a craigslist ad for something I want to buy. Lol

well i worked at the cafe in san fran. we had a pastry chef. she wasn't at front of house very often. got there early, left early. made pretty much the same cookies everyday, which we had to fill. that's all i got..
