ok so its a lil late but the chilli came out awesome. i made enough to feed prob 10+ people. i'm gonna right down the recipe so just scale it down for less people:
Johnny's Crock Pot Veggie Chilli
Total prep and cook time: 12-15hrs
...but worth the wait!
4 tomatoes
1 can on diced tomatoes with sweet chilies
1 big red onion
1 big yellow onion
1 can of white kidney beans (rinsed)
1 can of light kidney beans (rinsed)
3 bell peppers
2 jalapenos
cayenne >
coriander > to taste
salt & pepper >
4 cups of veggie stock
2lbs of veggie ground beef
Dice, tomatoes, onions, and bell peepers. Seed and derib jalapenos (depending on the heat you want), and then mince them. Add all the onions, tomatoes, peppers, beans, and veggie stock to crock pot. Add a lil s&p and stir everything up. Cook covered on "low" setting for 10-12hrs. (Stirring 3-4 times) And cayenne, coriander, S&P to taste. (make sure its tastes just a lil less then what you want it) Turn heat up to "high" for 2-3hrs. Add veggie beef and cook for 1hr. or till desired thickness.
i did leave some stuff out that makes mine my own. but there is a lot of stuff you can add to make it your own.

thanks for posting the recipe. i will definitely be trying it out this week and i will let you know how it turns out. it seems like a good thing to eat when its so cold here! what kind of veggie beef in particular did you use?
