Hmmmm.....something seems different here....can't quite put my finger on it....oh well!
I had a dull, dull weekend. The best part of the weekend was the food. Had wonderful catfish fillets for dinner on Sunday, along with my fav vegetable dish. I take a bag of frozen Calif. blend and a bag of stir fry veggies with noodles and combine them both in a large round microwave bowl. Blast them in the micro for 6 minutes, stir and blast them for another six minutes. Then, it's 6 thick slices of Velvetta cheese on top of them for another 3 minutes...stir....then another six slices go on top and back in for another 3 minutes. Oh yeah...all of this is with a lid on. At the end of 18 total minutes, you have the cheesiest blend of veggies and noodles ever. Good stuff Maynard! Add a baked potato and a nice salad and your're ready to eat! Here's a quick, easy good salad. In a large bowl: 2 large cans of chunky mixed fruit...drain them well and completely....one large can of crushed pineapple...drained well and completely....one large box of Jello instant vanillia pudding mix. Stir well and completely....the pudding mix will turn everything yellow. Then add Cool Whip to your level of comfort and mix well....put in the fridge til ready to eat. For the catfish, I like to broil them. Melt 1/4 lb. stick of butter in the microwave. Line a shallow metal pan with aluminium foil and pour the melted butter in. In your oven, move your oven rack to the top level, near the broiling element and turn oven on to broil....you will probably want to leave your oven door open a crack and turn on the fan above your stove. Lay the catfish fillets in the buttered pan and seaon one side with your fav seasonings....for the catfish, I like Mrs. Dash's lemon herb, a little black pepper and some Lawry's seasoned salt. Turn filets over and season the other side, making sure that both sides are buttered.. Put the fillets under the broiler for 5-6 minutes, depending on how thick the fillets are...turn them over for another 5-6 minutes....VOILA'
I suppose you could do this with other types of fish too....but I love catfish and it's about the only type that I have readily available to me here.
Doing laundry this morning and a few other house hold chores. The weather has been kinda crappy....cool and damp again for the last couple of days. Tomorrow should be better, so they say.
