OK...so I guess I should update here.
Actually, the last couple of days have been more hectic than Christmas day was.....go figure. Just lots of stuff to do and with people and family still around, it takes more time to do your normal routine. Today is better and things are more back to normal.
Christmas day was one of the best we've had in recent years. Not everyone could be here, but that is not unusual. 3 nephews didn't make it this year. 2 of them were doing the odd year inlaw thing and one of them is in a show in New York and had 2 shows to do on Christmas day.
The standing rib roasts went into the oven at 8:30. I had made the deviled eggs the night before, so the only other thing I had to do, was to put the green beans on to slow cook until noon. Everyone showed up around 10:30 for opening gifts. My great niece at 13 was the youngest one there.....she is growing up so fast. The best part of the day, was that my Mom was feeling pretty good and was able to enjoy everyone and the whole day. Last year, she wasn't doing so well and the day was hard on her. She had a big smile on her face all day this year....with almost all of her family gathered around her....she told me it was one of the best Christmas' we've had in a while. I had to agree.
The rib roasts came out even better than the last couple of years. I adjusted the dry rub I used this year, to include some other things and I think I controled the heat and cooking time a little better.....the turned out FABULOUS! Rave reviews from everyone....I think my head got a little bigger that day...hehehe...My sister brought her magnificent twiced baked potatoes and my sister in law brought her famous scalloped corn. We had scads of salads and desserts too. A little wine went along with the meal, for those who were interested. No one went away hungry....although the only meat left over, was what I cut off the ribs when dinner was over and we were cleaning up. Next year I'm going to need to add a couple of more lbs. The afternoon was spent talking, catching up, playing games, napping, laughing and taking photos. GOOD TIMES!
The calendars that I made as gifts for everyone, were a hit also...so that made me feel good and that the time was well spent.
