In the last year or so, I’ve become sort of a bread nerd. I love good bread... really good bread. There used to be a place I could get it, but they’re gone now. And I live in a rural area of New Hampshire, there aren’t a lot of options. So I’ve been teaching myself to make it.
Lots of failures and stuff that ends up being used for croutons in the learning process... but I’m starting to get the hang of it. My staple is a rustic sourdough that I let rise and ferment overnight to develop flavor... but lately I’ve been branching out to fun stuff like pretzels and bagels.
I made a batch of sesame seeded bagels tonight that turned out pretty good... and I was brought up in the New York City area... so I’ve got a pretty high bar to measure up to.
Maybe I’ll try making bialy’s next.
